How to properly cook tahini: oriental recipe

Tahini, also known as thina, is a traditional sesame paste in the Middle East that is consumed both as a spread and as part of many dishes and sauces.

It's an essential ingredient in hummus, falafel, babaganoush, and simply a healthy product to look out for when following a healthy diet. Sesame paste is very easy to make.

You only need high quality sesame seeds, raw or toasted. Roasted seeds give the tahini a more intense taste.

Ingredients:

  • 1 cup of sesame seeds
  • 2 tbsp l. or more olive oil (a mixture of refined and unrefined)
  • a neutral oil like grape seed and / or a small amount of sesame oil
  • Salt (optional)

Cooking instructions:

  1. If desired, roast the raw sesame seeds: Roasted sesame seeds give the noodles a nutty taste. Heat a dry skillet on the stove and toast the sesame seeds over medium heat, stirring frequently with a wooden spoon. Roast for about 5 minutes until it smells fragrant and the kernels have turned slightly dark (not too brown). Then transfer them to a tray or large bowl and let them cool completely.
  2. The seeds can also be dried in the oven: Preheat the oven to 175 ° C. Spread the sesame seeds evenly on a laid-out baking sheet and toast them for 5 minutes, stirring once or twice, until they are fragrant and the seeds have turned slightly dark (they shouldn't turn brown). Then transfer them to a tray or large bowl and let them cool completely.
  3. Grind the sesame seeds: Put the sesame seeds in the bowl of the food processor: Put the sesame seeds in the bowl of the food processor with the S-blade attached. (You can also use a mortar and pestle or a blender, but the result will depend on the type of blender). Grind the seeds for 2 to 3 minutes until you get a fluffy paste.
  4. Add the oil: add 2 tablespoons of oil to the bowl of the blender. Stir everything again for 1 - 2 minutes, scraping the dough from the walls, until a thick, homogeneous mass is formed.

Put the paste in a jar or other airtight container. Store in the refrigerator for a month or more. When the paste begins to peel off, stir it up.
